FIRST: the DELICIOUS tomato soup that I showed last week. It's not my recipe, but one that I saw on Amy's site. She said that it wasn't hers originally, but it came from This Week for Dinner. Without further ado, I present to you Tuscan Tomato Soup. To keep the calories down, I used evaporated skim milk in the place of cream. I used pesto from Trader Joe's. Oh, man, it was so, so yummy.
Second of all: I've decided what I'm giving up for Lent. Children. The End.

Okay Carmen, TALK TO ME! My diet nor my tummy can handle cream so I'm intrigued by you subbing in evaporated skim milk in the recipe. You substituted it in equal portions? And this "evaporated skim milk" is sold in a can near the "sweetened condensed milk" right? The recipe looks PERFECT for my ladies lunch this weekend. Thanks for sharing!

Giving up children huh? Nice. Like that. If I was even fully sure what Lent was, I'd of given mine up for it yesterday. Sheesh. Almost considered selling them on ebay.
