Summertime…..And the livin' is easy…..
We are fond of popsicles here. I'm not so fond of my kids eating sugar all day long, but everyone loves a popsicle. I made these fantastic Strawberry/Lime/Black Pepper popsicles and ate the entire batch in two days - and pay no attention to the fact that the recipe says you can dip them in tequila, I have NO idea why that would be recommended -
And I hit upon a genius idea when I made a gigantic blueberry/strawberry/mango/spinach smoothie that wasn't finished and I poured it into the popsicle mold
and suddenly, I was the.coolest.mom.EVAH, because I said, "Why, yes, of course, you may certainly have popsicles for breakfast!"
#ulteriormotive, I has it.
Then my 11 year old decided she would like to make her own popsicles, and would I please allow her to freeze sliced fruit and water together?
Thus her breakfast choice for the next couple of days was born.
I'm planning to make some pudding pops - I have a great chocolate pudding recipe that I think would make yummy pudding pops - who remembers those from the 80's, they were my favorite! - and some iced tea pops, and I'm contemplating creating some grown up beverage popsicles.
I'm using this popsicle mold, which I love - for the simple reason that I have three other molds and they are all plastic sticks, which means you can't make another set until you eat the first set and that's very annoying. I can create popsicles in this one, and as soon as they are frozen, pull 'em out and make more.
