I make this a lot. And I do mean, a LOT, in the summer.
It's very, very easy. I make pesto, but in place of using pine nuts, I use walnuts. (Suffice to say that my nut allergic kiddo doesn't eat this part of the meal.)
I boil cheese ravioli, and after draining it, I toss it with a bit of olive oil. Cube a couple of garden tomatoes or half a couple handfuls of cheery tomatoes, add in the pesto, and top with grated parmesan.
It's super quick and easy, and tastes like summer in a bowl.
