When people say root vegetables, I don't usually fan girl, but this was so different. The finished product doesn't look very good, but Oh My Lanta, is it fabulous. I loved it. My husband loved it. My KIDS - ALL of them - loved it. And it was dead simple.
Start with root vegetables of your choice - and if you don't know what root veggies are, no shame in that game. Some of the options include potatoes, sweet potatoes, squash, rutabagas, parsnips, carrots, onions, celery - basically, pick what you want. My grocery store actually had a big assortment of them already done. Give 'em a peel and a rough chop and toss them with a bit of olive oil. Place them on a parchment lined baking pan and roast at 450 for 30 minutes.
While the vegetables are roasting, slice one package of chicken apple sausage. Drain and rinse one can of chickpeas and one carton of grape tomatoes.
Add the chicken apple sausage, the chick peas and the tomatoes to the partially roasted veggies. Toss them and then roast for another 30 minutes.
While it's all roasting, make one package of couscous.
When the veggies and sausage are done, place them over the couscous. Crumble feta cheese on top and drizzle with balsamic glaze and try to avoid burying your face in the pot.
