I love these muffins. They are one of my favorite muffins to make, because once you brown the sausage, you literally dump everything else into a bowl, mix it all up, and dump into muffin tins. It's quick. It's easy.
I made a batch up this morning, and my oldest daughter asked if I could pack her a muffin to take to work. I asked if she wanted one or two, and she responded, "Three." I asked who she was sharing with, and she said,"I'm not sharing. I'm eating all three.Why? You trying to say something?"
Truly, these are the muffins that you need in your mornings.
Cheddar Sausage Muffins
Brown one pound maple breakfast sausage. Crumble well and allow to drain on paper towels briefly while you mix the remaining ingredients.
Into a large bowl, add 2 cups flour, 2 T sugar, 1 egg, 1/4 cup butter (melted), 1 T. Baking powder, 1 cup milk, 1 cup grated cheddar cheese and the drained sausage. Scoop batter into greased muffin tins. Fill 3/4 full, as they don't rise very much.
Bake at 350 for 15-18 minutes, or until a skewer poked into the middle of the muffin comes out clean.
Inhale two at lightning speed while still hot and feel your sanity returning. Even better if paired with a cup of coffee.
