Yummy, fast snack food
From Women's Health May 2007
Chunks of Energy are sold at Dancing Star, and many grocery stores - you can search the website to find a location near you. They were kind enough to share their recipe, which sounds really awesome to me. I'll be making these soon.
Heat one cup honey until warm. Add 1 cup peanut butter slowly, until mixable. Stir in 1 cup carob powder - I'm wondering if I can use Cocoa, because I HATE carob with the passion of a thousand suns - and 2 cups total of and seeds, nuts and dried fruits. Press into oiled 8x8 and chill for one hour. Cut into 25 small squares. Keep in fridge for one month.
Or, you know, order a 4 pound sampler at their website. There are TONS of choices.

That is a GREAT recipe! Deels makes them all the time; I'm almost sure he uses cocoa.

I'm interested to know how this turns out because it sounds great! I do have one small (and maybe dumb) question. How would one go about heating honey? Seems it would be an awful mess on the stove but not very fun in the microwave either. Nevermind, I just realized this really sounds dumb :)

I sincerely appreciate your very positive comments about Dancing Star's Chunks of energy, my family own business since 1992. About 70% of our customers are Women, who like to eat a very satisfying, low salt snacks. The recipe that was in the May Issue of Womens Health(http://www.womenshealthmag.com/article/0,6176,s1-2-62-1644-1,00.html uses carob powder, but you can subtitute cocoa powder or use part sunflower meal or almond meal. To boost the nutrition you can add spirulina, a super concentrated green food, ginseng powder, or soy protein powder.
My three daughters Sylvia, Leah, and Hannah were my official taste testers and tried hundred of flavors combinations and endured my many questions about flavor, texture, and sweetness. My girls all played sports at our local high school Mohawk Regional in the Berkshire Hills of Western, Mass and the sports team here were powered to many success with the energy from Chunks of energy. High School favorite flavor was chocolate almond chip.
Heather to answer your question about heating honey, fill a sauce pan with water and add jar of honey and heat very slowly till it melts. You can also use maple syrup or rice syrup.
