Decadent Dark Chocolate Mousse, healthy style
This was in Fitness magazine, February 2008. I was skeptical. I made it and didn't tell my family exactly what was in it. My kids were divided - the little one hated it - I think because it was dark chocolate and not milk. My bigger kids ate it up. No one knew it contained tofu. Wait, don't turn up your nose. Tofu is tasteless and has a great consistency. Try it. I think you'll like it. I'll make it again, using a less bitter chocolate, and I think it'll be a bigger hit.
12.3 ounces silken tofu, drained
3 ounces dark chocolate, at least 60%
1/4 unsweetened cocoa powder
1/4 cup water
1 T brandy - I substituted Kahlua
1/3 cup powdered sugar
In a blender, process tofu until smooth. (Note: I had to add a bit of water, as it wouldn't blend without.) Combine chocolate, cocoa, water and brandy in saucepan and stir until melted. Remove from heat. Stir in powdered sugar a little at a time until smooth. Add chocolate mixture to tofu and process until smooth. Refrigerate at least an hour.






Yum! I love making desserts with tofu, and haven't done so in ages. I'm definitely going to try this.

I originally read it as 1 cup of brandy and was thinking I don't think my kids would liek that either! ;-)

Tofu really is a wonderful ingredient to work with – I marinated some cubes in fajita seasoning the other day and made a great pepper/onion/tofu burrito.

Hey gals STOOPID question, where is the tofu at the grocery store? Produce? COuld be my crappy only option SUPER store doesnt carry it. I have to order individual soy milk from amazon!

Mary, if there is a health food aisle or an ethnic aisle with Asian foods, I'd check there. Silken tofu doesn't have to be refrigerated, so probably isn't. In my grocery store it's by the soy milk, though, so you may be out of luck. :(

I think Whole Foods sells a similar mousse in its prepared food section that's pretty darn tasty. I'll have to try this, because the WF stuff costs about $4 a serving.

This can be made with Splenda; those of us abstaining from added sugar substitute Splenda for the powdered sugar and sugar-free instant chocolate pudding for the cocoa powder--I've made it for my siblings and they couldn't tell the difference.

Sounds heavenly except for the brandy. Would leaving out the alchol compromise the taste? btw, there's nothing bitter about dark chocolate. It is the best taste there is.
