I love summer tomatoes. I eat and eat them until I feel like I'll turn red from more than the sun. I mourn the end of summer tomato season - although I do like fall for many other reasons. Winter tomatoes look pretty most of the time, but taste like stale cardboard. Not that I would know what stale cardboard tastes like, but I'm betting winter tomatoes taste JUST like that.
I saw this recipe in Fitness magazine and am anxious to try it out.
Slice tomatoes, toss with a little olive oil and place in a baking dish. Roast in the oven at 400 degrees for 15 or 20 minutes. Finish by drizzling the tomatoes with balsamic vinaigrette or sprinkling with Parmesan cheese and topping with a dash of salt and pepper.


I've tried several versions of that recipe-
varying it now & then... maybe with a dash of celery seed/salt or garlic salt or onion powder
or sliced red onions over top with cheese

Doing that with grape tomatoes is also good. Just roast them until they burst, maybe with some garlic as well. Good on pasta or couscous like this recipe here: http://www.loveandoliveoil.com/2009/01/israeli-couscous-with-olives-and-roasted-tomatoes.html

I love summer tomatoes, I plan to plant at least 4 plants this year so I can have them any time (well when Mother Nature allows).

Ah...there you are. I lost track of your site and have finally found it again. Good. And I have good news to share.
Since Nov 1 last year I have lost 23.2 pounds. Weight Watchers and long, vigorous walks.

Do that with LOTS of veggies: tomatoes, potatoes, eggplant, squash, onions, mushrooms. You name it. Then save them for quick additions to salads, sandwiches, etc. for the next couple days. They are teh yum.
